Broiled Tilapia with Mustard-Chive Sauce

Ingredients

  • Fish:
  • Vegetable oil cooking spray
  • 4 (5 to 6-ounce) tilapia fillets
  • Extra-virgin olive oil, for drizzling
  • Kosher salt and freshly ground black pepper
  • Sauce:
  • 1/4 cup plain, full-fat Greek yogurt
  • 2 teaspoons agave nectar or honey
  • 1 teaspoon Dijon mustard
  • 1/4 cup lemon juice (from 1 large lemon)
  • 2 tablespoons chopped fresh chives
  • Kosher salt and freshly ground black pepper

Directions

  • For the fish: Preheat a broiler. Spray a small baking sheet or glass baking dish with vegetable oil cooking spray. Set aside.
  • Drizzle the tilapia fillets on both sides with olive oil and season with salt and pepper. Arrange the fillets in a single layer on the prepared baking sheet and broil until cooked through and the flesh flakes easily with a fork, about 6 to 8 minutes. Set aside to cool slightly.
  • For the sauce: In a small bowl, mix together the yogurt, agave nectar, and mustard until smooth. Whisk in the lemon juice and chives. Season with salt and pepper, to taste.
  • Transfer the tilapia to a serving platter and drizzle with the sauce.

Sauls Secret Shrimp Perlow Recipe

Ingredients

  • 3 Cups of White Rice
  • 1 Qt Shrimp
  • 1 Big Onion Diced
  • 1 Pack Bacon
  • 2 Bags of Frozen Okra or preferably a large handful of fresh okra

Directions

  • Fry Bacon
  • Take 1Tbls of the bacon grease and place into Frying Pan to sauté the shrimp
  • Do the same for the diced onions
  • Take the remaining bacon grease and use that to fry out the okra
  • Mix all together and let stand for a bit to soak in the flavors. Serve up and enhance the taste with Texas Pete Hot Sauce

Baked Lemon Shrimp

Ingredients

  • 1 stick of butter
  • 1 lemon sliced
  • garlic powder
  • Italian Seasoning
  • Shrimp

Directions

  • Melt the stick of butter in a baking sheet in the oven.
  • Slice the lemon and lay the slices in the melted butter.
  • Sprinkleon the garlic powder.
  • Lay your shrimp on top of the lemon slices.
  • Sprinkle onItalianseason over shrimp
  • Bake at 350 for 15 minutes - or until shrimp is done.
  • I serve it over a bowl of brown rice! This is an easy recipe for people on vacation!

Maryland Crab Soup

Ingredients

  • 2 tsp. Olive oil
  • 2 stalks celery chopped
  • 1 onion chopped
  • Sauté above in large pot until clear NOT brown.
  • Add:
  • 1lb crab meat cleaned of shells
  • 2- 14 oz can diced tomatoes with juice
  • 4 cups water
  • 3 cups beef broth
  • 1 16 oz. bag frozen mixed vegetables ( corn, green beans, carrots, Lima beans. feel free to add more if desired.)
  • 1 cup chopped cabbage
  • 2 cups cubed potatoes
  • 2 bay leaves
  • 2 tblsp. Old bay (or more if desired)
  • 4 slices uncooked bacon cut into approx 2" pieces.

Directions

  • Bring to boil and cook on low for at least 1/2 hour.
  • Add:
  • Fist full of barley
  • Cook 30min.
  • Add:
  • 4 cups v8
  • Heat back to boil and serve.
